Hi everyone! I hope you like this recipe. It was really warming and the flavours seem like they fit for the fall. I love leeks. They add so much without the added carbs that onions would add to a recipe.
Ingredients:
- Whole Eggs (large x 12)
- Parmesan Cheese (1 cup shredded)
- Olive oil (1 tbsp)
- Large Italian Sausages ( 2 each – remove casings)
- Whole Leek (chopped)
- Aged White Cheddar Cheese (1/2 cup shredded)
- Cherry Tomatoes (8 halved)
Method:Β
- Pre-heat your oven to 350 degrees (f)
- Heat olive oil in an oven safe frying pan on medium heat.
- Add the sausage, removed from casings and crumbled.
- When the sausage has browned slightly, add the leeks.
- Cook until the leeks have reduced to 1/2 side and are cooked through.
- In a bowl, whisk together the parmesan and eggs.
- Add the mixture to the pan and mix around so that the ingredients are evenly distributed.
- Add halved tomatoes on top of the mixture.
- Cook on the burner for another 5 minutes.
- Sprinkle cheddar on top of the frittata and put in the oven for 10 minutes.
- Broil on high for 5 minutes.
- Slice and serve!
