Hi everyone! I hope you like this recipe. It was really warming and the flavours seem like they fit for the fall. I love leeks. They add so much without the added carbs that onions would add to a recipe.

Ingredients:

  • Whole Eggs (large x 12)
  • Parmesan Cheese (1 cup shredded)
  • Olive oil (1 tbsp)
  • Large Italian Sausages ( 2 each – remove casings)
  • Whole Leek (chopped)
  • Aged White Cheddar Cheese (1/2 cup shredded)
  • Cherry Tomatoes (8 halved)

Method:Β 

  1. Pre-heat your oven to 350 degrees (f)
  2. Heat olive oil in an oven safe frying pan on medium heat.
  3. Add the sausage, removed from casings and crumbled.
  4. When the sausage has browned slightly, add the leeks.
  5. Cook until the leeks have reduced to 1/2 side and are cooked through.
  6. In a bowl, whisk together the parmesan and eggs.
  7. Add the mixture to the pan and mix around so that the ingredients are evenly distributed.
  8. Add halved tomatoes on top of the mixture.
  9. Cook on the burner for another 5 minutes.
  10. Sprinkle cheddar on top of the frittata and put in the oven for 10 minutes.
  11. Broil on high for 5 minutes.
  12. Slice and serve!
